Anzac Biscuit Recipe

I know most people only make Anzac biscuits for Anzac Day. Not my family. Growing up we always had a jar of Anzac biscuits lurking in the pantry. And nothing has really changed. They’re still my comfort food. The chewy oat goodness. They’re moreish. Addictive, even. There really is nothing better than a nice hot cup of tea and a bikkie after a hard day’s work—which is exactly why I just had one. For Lunch. Recipe below. MC

Anzac Biscuit Recipe

You’ll Need:

1 1/4 cups plain flour

1 cup rolled oats

3/4 cup desiccated coconut

1/2 cup caster sugar

1/2 teaspoon bicarb soda

2 tablespoons of golden syrup

150g butter (unsalted)

 

ANZAC BISCUITS RECIPE

  1. Preheat oven to 170°C  and sift the flour into a large bowl
  2. Add oats, sugar, coconut and bicarb and stir until combined
  3. Now in a small saucepan place the golden syrup and butter 
  4. Pour into the dry ingredients and mix together until mixture comes together 
  5. Roll tablespoonfuls of mixture into balls and press down slightly – place on baking tray lined with non stick baking paper
  6. Bake for 12 minutes or until golden brown
