Chocolate Brownies with Rum Frosting and pretzels

Most of my school holidays were spent at my best friend’s house. We were practically joined at the hip. I was an only child, and my mum was raising me by herself so she always worked through the holidays. Kathryn had two younger brothers and an older sister. I loved being apart her big family, even if it was only for a few days. We’d have water fights, play hide and seek, and get up to all sorts of mischief. Selfies didn’t exist then, and we were only five—ahhh, to be young and innocent again!

I always loved Julie’s (Kathryn’s mum) chocolate brownie recipe. They were divine. Even when I eat them now, it takes me back to being five all over again. Over the years I’ve tried to replicate them and I think I’ve finally got the fudge brownie recipe right. (Although back then they weren’t iced with rum frosting and pretzels!) Now, that would have made for an interesting childhood memory… MC

Chocolate Fudge Brownies

You’ll need:

Melted butter to grease

200g dark chocolate chopped up

200g butter roughly chopped

3 eggs and 2 egg yolks

1 1/4 cups caster sugar

3/4 cup plain flour  sifted

1/3 cup Cocoa Powder sifted


Fudge Brownie Recipe

  1. Preheat oven to 160°C. Grease your square pan with melted butter and line with non stick paper with the sides overhanging
  2. Add chocolate and butter to a heatproof bowl over a saucepan half-filled with water until melted. Set aside to cool
  3. Whisk the eggs and egg yolks together and add to cooled chocolate mix
  4. Sift cocoa powder and flour into a mixing bowl. Stir in sugar.
  5. Add the choc mixture and stir until just combined. Pour into square pan
  6. Bake in oven for 50 mins or until skewer comes out clean. Set aside to cool (and set) for 4/5 hours before frosting
  7. Carefully frost with rum icing, (details below) cut into squares and top with salted pretzels

Rum Buttercream Frosting

You’ll need:

1/2 cup softened butter

2 cups of icing sugar

3 tbsps of Beenleigh Honey Rum

3 tbsps milk

1 tsp vanilla extract

How to make Frosting

  1. Beat butter with electric mixer until creamy and soft
  2. Add first cup of icing sugar, beating slowly, then add rum, milk and vanilla
  3. Add last cup of icing sugar and beat until smooth
