I’m not going to deny it. I’m a lazy cook. If you’re like me, then you’re going to love this. It has to be the easiest recipe ever. One bottle of Cola. One bottle of BBQ Sauce. One good slurp of Chipotle Hot Sauce. Your slow cooker. About 1.5kg of Pork Shoulder, sans skin. Don’t fear—it won’t go to waste—you can use that to make some crackling chips. Pop it all in your slow cooker. Leave it for 10 hours and the pork just falls apart.
Strain the sauce and reduce it on a stove for about 45 mins until it’s thick. Really thick. Add the pork back in and serve on some mini brioche buns. I get mine from Breadtop. I like to serve them with pickles and fried crackling chips on the side. Or you could just go the whole hog, and serve them with fried pickles. This is perfect Sunday lunch fare. Enjoy Possum! MC
