Donna Hay is a bit of a legend in my book. I’m always on the lookout for a quick and easy cookie recipe (For the Aussies playing at home we call them biscuits.) and this recipe is perfect. All up, they only take you about 20 minutes to make, from start to finish. Just be careful you keep an eye on them when they reach the 10 minute mark, otherwise you’ll suffer the same fate I did, and the jersey caramels will melt all over the biscuits. Damn, I had to eat the dodgy batch. Hashtag: sarcasm. (Incriminating evidence below.) These are easy, quick and fun—what’s not to love? All hail, Donna Hay! MC

DONNA HAY’S JERSEY CARAMEL COOKIE RECIPE

You’ll need:

  • 60g unsalted butter
  • 1/3 cup (115g) golden syrup
  • 1/3  cup (60g) brown sugar
  • 1.5 cups (225g) self-raising (self-rising) flour, sifted
  • 8 soft jersey caramels cut in half

Cooking Donna Hay’s Cookies

  1. Preheat oven to 180ºC
  2. Place the butter, golden syrup and sugar in a saucepan over low heat and stir until the sugar is dissolved and set aside to cool
  3. Add the flour to the butter mixture and mix until a smooth dough forms.
  4. Roll tablespoonfuls into balls and place on baking trays lined with non-stick baking paper
  5. Press to flatten and top each with half a jersey caramel
  6. Bake for 10–12 minutes or until golden and allow to cool on the trays (Makes 12)
