More Slashie food. I just can’t help myself. Once I heard about this recipe, I had to give it a whirl. I ended up changing a few things, to try and replicate some of the wonderful southern-style cooking I ate in New York. They are super easy to make and the end result is like eating KFC mixed with Mama’s fried chicken. It’s sounds—and tastes—better when you say it like Britney, y’all. Serve them up with an apple slaw and sweet potato fries (recipes to come) and you’ve got the perfect (artery clogging) meal. MC

IN THE KITCHEN:
- Preheat the oven to 200° degrees.
- Place 1 cup of the flour in a medium bowl and season with salt and pepper. In another medium bowl, whisk the milk with the mustard and season with salt and pepper. In a large bowl, stir the crushed potato chips with the remaining 1/4 cup of flour.
- Season the chicken drumsticks with salt and pepper, then dust with the flour, tapping off any excess. Dip the pieces in the buttermilk, then coat in the crushed potato chips, pressing to help them adhere. Transfer the chicken drumsticks to a tray lined with baking paper, season once more and spray with olive oil.
- Bake for 45mins or until golden and cooked through. Serve with an apple slaw and sweet potato fries!
