Mouth-watering Maple Mustard Glazed Turkey Legs

On my last trip to the states with Steph, for our first international #GirlsOnTour adventure, we were lucky to be in town at the same time the LA County Fair was on. (Don’t worry, I’ll be dedicating a whole post to the LA County Fair!) There was one thing while I was there, that really struck me—the food. 

Now, it wasn’t the ramen burgers, or the deep fried red velvet cakes on sticks, or the waffle fries or even the thrice-fried twinkies. Nope. It was people walking around the fair, hoeing into a turkey leg with wild abandon! Feasting like Fred Flintstone on his way to meet Barney Rubble at the local Dinosaur Diner!

It was weird.

Then, a couple of weeks later at Disneyland I saw the same thing.  Suffering a case of FOMO, and, being the joiner that I am, I figured I’d have a crack at making them myself. You can’t knock it, until you’ve tried it. Caveman pops: I say, Yabba dabba doooooo! MC

1/4 cup of a good quality maple syrup

2 teaspoons of a good hot mustard

1 tablespoon of Worcestershire sauce

1/2 a teaspoon cayenne pepper

Salt and pepper to season

turkey drumsticks, rinsed and patted dry

1 medium onion, sliced 1/4 inch thick

tablespoons of unsalted butter to dot on the turkey legs

  1. First, you’ll need to make the sauce!
    Fire up your oven to about 200°C degrees. In a bowl you’ll need to combine the maple syrup, mustard, Worcestershire sauce, about a pinch of salt, and the cayenne pepper. Stir, and set aside.
  2. Next you need to roast the turkey legs:
    Give the turkey legs a good seasoning with salt and pepper and place the chopped onions on the bottom of the toasting pans. Lay the turkey legs on top and dot with your butter and roast for half an hour.
  3. Start basting with the sauce:
    After 30 mins you can start to brush the turkey legs with the sauce you prepared earlier, meanwhile you should reduce the oven temperature to 160°C. Continue to baste with the sauce every 20 mins until meat is very tender.
  4. Serve!
    After about an extra 90 mins of roasting and basting, the meat should be practically falling of the bone and the marinade should have caramelised. Serve your turkey legs hot or at room temperature with some waffle fries! Enjoy!
