Oh god, I live to snack. I can’t lie. I’m all about morning tea and afternoon tea and maybe even a post-dinner snacky-snack. We have a term for it in our house—it’s when you’re ‘feelin’ snacky’. You know, when you keep looking in the fridge for something that will quell that rumble? Something that will hit the spot? You invariably end of eating something really bad, and feeling terrible afterwards. You start with just ‘one chip’, and next thing you know you’ve hoovered the entire bag! Or worse, when you work in an office full of girls, all it takes, is for someone to buy a bag of lollies [Cough, Cough] and before you know it you’re knocking them back with wild abandon! Yee ha!

Isn’t it funny, how when you go out to dinner and a friend says she’s having a salad, you want to be healthy too. Or in my case, when I decide that I’m treating myself to a big bad burger, my friends ditch the diet too. Aren’t we terrible? We’re all enabling each other’s bad eating habits.
Don’t take my word for it, according to research released by Wonderful Pistachios, 63% of us admit, we’re more likely to eat unhealthy snacks if we’re around people who are too. So today, I’m getting all healthy on you with a Dark Chocolate Pistachio Peaches recipe. Trust me, they taste as good as they look and they’re ridiculously easy too! MC

A bag of dried peaches or apricots
A block of dark cooking chocolate (You’ll only need 1/3)
A handful of Pistachios

- Break up your chocolate into squares and melt in the microwave, stirring every 30 seconds to make sure you don’t burn it
- Roughly chop your pistachios up with a knife and set aside
- Dip peaches halfway with dark chocolate and place on a non-stick tray
- Top with pistachios while the chocolate is still warm
